Mochi Cookies

## Mochi Cookies

Ingredients

  • 350 g glutinous rice flour
  • 60 ml coconut milk
  • 300-350 ml water
  • 1 tbsp sunflower oil
  • 1 tsp vanilla
  • 80 g sugar
  • 30 g shredded coconut
  • 50 g chocolate chips
  • 1 pinch fleur de sel
  • 1 tbsp cocoa
  • 2 tbsp water

Steps

  1. Preheat oven to 200°C and line a baking sheet with parchment paper.
  2. Mix glutinous rice flour, coconut milk, 300 ml water, oil, sugar, and vanilla until smooth (add a little water if needed).
  3. Incorporate shredded coconut, chocolate chips, and fleur de sel.
  4. Mix cocoa with water, drizzle over the dough, then mix roughly for a marbled effect.
  5. Drop spoonfuls of dough onto the baking sheet, oil a spatula, and flatten slightly.
  6. Bake for 13-15 minutes: the top should be set and slightly crispy, the bottom golden.
  7. Let cool slightly on a wire rack before serving.
