## Mochi Cookies
Ingredients
- 350 g glutinous rice flour
- 60 ml coconut milk
- 300-350 ml water
- 1 tbsp sunflower oil
- 1 tsp vanilla
- 80 g sugar
- 30 g shredded coconut
- 50 g chocolate chips
- 1 pinch fleur de sel
- 1 tbsp cocoa
- 2 tbsp water
Steps
- Preheat oven to 200°C and line a baking sheet with parchment paper.
- Mix glutinous rice flour, coconut milk, 300 ml water, oil, sugar, and vanilla until smooth (add a little water if needed).
- Incorporate shredded coconut, chocolate chips, and fleur de sel.
- Mix cocoa with water, drizzle over the dough, then mix roughly for a marbled effect.
- Drop spoonfuls of dough onto the baking sheet, oil a spatula, and flatten slightly.
- Bake for 13-15 minutes: the top should be set and slightly crispy, the bottom golden.
- Let cool slightly on a wire rack before serving.
