## Two Lentil Salads

Ingredients

  • 240g cooked lentils
  • 6 tbsp olive oil
  • 2 tbsp maple syrup
  • Juice of 1 lemon
  • Salt
  • 140g cucumber
  • 100g feta
  • 200g chicken
  • 70g radish
  • Parsley (or other herbs)
  • 4 hard-boiled eggs
  • 1/2 red onion
  • 40g diced ham
  • Bouillon
  • Garlic

Steps

  1. Rinse the lentils and cook them in cold water with bouillon and garlic. Bring to a boil and then simmer.
  2. Prepare and cut all the ingredients for the chosen salad.
  3. Put the lentils in a salad bowl.
  4. Add the proteins (chicken/feta or eggs/ham).
  5. Add the vegetables (cucumber, radish, onion).
  6. Add parsley or fresh herbs.
  7. Pour in the sauce (olive oil + lemon + maple syrup + salt).
  8. Mix gently to coat all ingredients well.
  9. Taste and adjust seasoning if needed.
